Pumpkin Protein Pancakes

INGREDIENTS


1 egg (beaten)

Milk (your choice)

  • 1 ¼ cup

Whole grain pancake mix

  • 2 cups

AdvantEDGE Lean 15 Protein Powder – Vanilla Cream

  • 2 scoops

Canned pumpkin

  • ½ cup

Pumpkin pie spice

  • 1 tbsp.

PREPARATION


In a medium bowl, mix all ingredients until smooth. Batter will be thick. Allow to rest 5 mins and while batter rests, heat a non-stick griddle to medium-high heat. Spray with cooking oil. For each pancake, ladle ~ 1/4c batter onto hot griddle. Cook until bubbles form around edges and then flip. Cook about 3 minutes on the other side or until golden. Makes 16 large pancakes.
