Protein Packed Baked Potato

Ingredients
- 2 baked potatoes
- 1/2 cup fat-free cottage cheese
- 1/2 cup diced chicken, cooked (you can also use store-bought shredded rotisserie chicken)
- 2 tablespoons diced tomatoes
- 2 tablespoons salsa
- 2 tablespoons low-fat shredded cheese
Preparation
Cut open each baked potato, and top with the rest of the ingredients. This is a quick and easy dish that works for lunch or dinner.
