Ingredients

  • 2 baked potatoes
  • 1/2 cup fat-free cottage cheese
  • 1/2 cup diced chicken, cooked (you can also use store-bought shredded rotisserie chicken)
  • 2 tablespoons diced tomatoes
  • 2 tablespoons salsa
  • 2 tablespoons low-fat shredded cheese

Preparation


Cut open each baked potato, and top with the rest of the ingredients. This is a quick and easy dish that works for lunch or dinner.
