Terrific Tuna, Apple, Tomato Salad

Ingredients
- 1 (3-ounce) can water-packed tuna, drained
- 1 small Granny Smith apple (diced with skin on)
- 1/3 cups diced fresh green bell pepper
- 3 tablespoons non-fat salad dressing
- 1 fresh tomato, cored and kept whole, but partially cut into wedges so there is room to stuff the ingredients
- Romaine lettuce
- Fat-free shredded mozzarella cheese
- Salt and pepper to taste
- Fresh basil, chopped celery, chopped pecans/walnuts (optional)
Preparation
Mix all ingredients and stuff into the partially cut tomato. Serve on a bed of romaine lettuce. Sprinkle with fat-free mozzarella cheese and chopped sprigs of fresh basil if desired. Add salt and pepper to taste.
