Mexican Smoked Turkey Salad

Mexican Turkey Salad

  • 3 cups diced, cooked smoked turkey breast
  • 1 (15.5 ounce) can black beans, rinsed and drained
  • 1 ½ cups corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 cup diced bell peppers 
  • 1 cup diced avocado
  • ½ cup finely chopped red onion
  • 3 cups salad greens of your choice
  • ½ cup chopped fresh cilantro
  • 1 teaspoon bottled, minced garlic
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • Salt and pepper to taste


Combine turkey, beans, corn, tomatoes, bell peppers, avocado and red onion in a bowl. Whisk together cilantro, garlic, lemon juice, balsamic vinegar, olive oil, salt and pepper in another bowl. Add dressing to turkey mixture and toss. Divide salad greens among four plates and top with turkey salad. Serves 4.
