Meatloaf Muffins

Ingredients
- 1 teaspoon olive oil
- 1 cup diced onion
- 1/2 cup diced carrot
- 1 teaspoon dried oregano
- 2 garlic cloves, minced
- 1 cup low-sugar ketchup, divided
- 1 1/2 pounds ground beef or turkey, extra lean
- 1 cup bread crumbs
- 2 tablespoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon ground pepper
- 2 large eggs
- Cooking spray
Preparation
Preheat oven to 350 degrees.
Heat olive oil in a large nonstick skillet over medium-high heat. Add diced onion, carrot, dried oregano and garlic; sauté two minutes. Cool. Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl. Spoon meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350 degrees for 25 minutes. Let stand five minutes. This recipe is easily doubled, and makes great lunch
leftovers as well.
