2 cups shredded rotisserie chicken
½ cup shredded carrot
½ cup scallions, chopped
¼ cup cilantro, chopped
½ cup low-sodium chicken broth
2 tablespoons low-sodium soy sauce
2 teaspoons toasted sesame oil
1 teaspoon sesame seeds
1 teaspoon Chinese mustard
12 large lettuce leaves (such as Bib lettuce)


Heat chicken in a skillet sprayed with cooking spray at medium-high for three minutes. Remove from heat and toss with the carrot, scallions and cilantro. Mix together the chicken broth, soy sauce, sesame oil, sesame seeds and mustard. Add the chicken mixture and stir to coat. Fill each lettuce leaf with a spoonful of the chicken mixture. Serves 4.
