Italian Baked Halibut

  • 1 teaspoon olive oil
  • 1 cup zucchini, diced
  • 1/2 cup red onion, diced
  • 1 teaspoon bottled, minced garlic
  • 2 cups tomatoes, diced
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon oregano, dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon crushed red pepper
  • 4 (6 ounce) halibut steaks
  • 1/3 cup low-fat feta cheese, crumbled
  • Cooking spray


Preheat oven to 450 degrees. Spray a shallow baking dish with cooking spray. Heat olive oil in a nonstick skillet over medium heat and add zucchini, onion and garlic. Sauté five minutes, or until tender. Remove pan from heat and add tomatoes, basil and oregano.

Season halibut steaks with salt, black pepper and red pepper and arrange in a single layer on the prepared baking dish. Add equal amounts of the zucchini mixture over each steak. Top with feta cheese. Bake 15 minutes or until fish flakes easily with fork.
