Greek Turkey Burgers

Ingredients
- 1 pound extra-lean ground turkey
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup bread crumbs (like Progresso)
- 1 small onion, finely chopped
- 1 teaspoon bottled, minced garlic
- 2 tablespoons chopped fresh mint
- 4 teaspoons chopped fresh oregano (or 1 teaspoon dried oregano)
- 1 tablespoon fresh lemon juice
- 2 eggs, beaten
- 3 cups baby spinach leaves
- 1 medium tomato, cut into ¼-inch-thick slices
- 1 red onion, cut into ¼-inch slices
- 1/3 cup crumbled feta
- 4 whole-wheat pita halves
Dressing
- 2/3 cup nonfat plain Greek yogurt
- 1 tablespoon chopped fresh mint
- 1 teaspoon bottled, minced garlic
- 2 teaspoons Dijon mustard
- 1 teaspoon honey
- ½ cup peeled, seeded and finely diced cucumber
- Salt and pepper to taste
Preparation
Add ground turkey, salt, pepper, bread crumbs, garlic, mint, oregano, lemon juice and eggs to a large bowl. Mix thoroughly to ensure ingredients are evenly distributed. (You might need to use your hands to make sure mixture is combined.) Form into four patties. Grill until done or cook in a skillet sprayed with cooking spray. Mix yogurt, mint, garlic, mustard and honey together in a bowl. Stir in cucumber and season with salt and pepper. Warm pita halves in a microwave for 30 seconds. Stuff each pita half with spinach leaves, tomato and onion slices. Drizzle with dressing, add a turkey burger and sprinkle with feta cheese. Serves 4.
