Fish Tacos

  • 1 jalapeno pepper, diced
  • 1/2 cup onion, diced
  • 1 teaspoon minced, bottle garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup low-sodium chicken broth
  • 2 large tomatoes, diced
  • 1/2 teaspoon cumin
  • 1 1/2 pounds halibut filets (tilapia also works)
  • Juice from one lime
  • 6 whole-wheat tortillas
  • Cooking spray


Spray a nonstick skillet with cooking spray and sauteÅL the pepper, onion and garlic over medium heat, until tender. Season with salt and pepper. Add chicken broth, tomatoes and cumin to skillet and bring to a boil. Reduce heat to low and add halibut and lime juice. Cook 15 to 20 minutes or until the halibut is easily flaked with a fork. Wrap in a warmed tortilla and serve.
