  • 1 cup red bell pepper, cut into strips
  • 1 cup cooked, shredded rotisserie chicken
  • 2 cups pre-washed, shredded lettuce
  • 1/4 cup salsa
  • 1/4 cup fat-free, shredded Monterey Jack cheese
  • 4 whole-wheat tortillas
  • Cooking spray


Spray a nonstick skillet with cooking spray and cook bell pepper over medium heat for four minutes, or until tender. Stir in chicken and heat through. Spoon meat and pepper mixture and rest of fillings into tortillas, roll up and eat.
