Broiled Greek-Style Lamb Chops

Ingredients
- 1 teaspoon olive oil
- 1 tablespoon dried oregano
- 2 tablespoons lemon juice
- 1 tablespoon bottled minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 (4-ounce) lamb loin chops, trimmed
- Cooking spray
- 3/4 cup plain fat-free Greek yogurt
- 1 tablespoon fresh chopped dill
- Salt and pepper, to taste
Preparation
Preheat broiler. Combine first six ingredients and rub over both sides of chops. Place chops on a broiler pan coated with cooking spray. Broil for about four minutes on each side or until done to your liking. While the lamb chops broil, mix together the yogurt and dill, and season the yogurt mixture with salt and pepper. Once lamb chops are done, top each with a little yogurt mixture. Serve this meal with couscous tossed with chopped tomato, cucumber and a little feta cheese. You can also grill the lamb chops. Serves 4.
