Spicy Scrambled Eggs

  • 4 eggs, 2 egg whites
  • 1 tablespoon fat-free plain (or Greek) yogurt
  • 1/4 cup skim milk
  • 1 teaspoon bottled, minced garlic
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup cilantro, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, ground
  • 2 tablespoons low-fat, shredded Parmesan cheese


Whisk together eggs, yogurt, milk, garlic, red pepper, cilantro, salt and pepper. Spray a nonstick skillet with cooking spray and cook egg mixture over medium high heat until done. Top with Parmesan cheese.
