Breakfast Scramble

Scramble Eggs

  • 1 boneless, skinless chicken breast, sliced into bite-size pieces
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 3 eggs
  • 1 tablespoon skim milk
  • 1 medium tomato, diced
  • 1 small avocado, diced
  • 1 tablespoon low-fat or fat-free shredded cheese  
  • Cilantro, coarsely chopped
  • Cooking spray


Spray a non-stick pan with cooking spray, add chicken, cumin and chili powder and cook on medium-high heat until done. Whisk together eggs and milk in a bowl. Spray a separate pan with cooking spray; add eggs and scramble until firm. Put half of avocado and tomato on one plate and the other half on another plate. Add half the chicken and scrambled eggs to each plate, top each plate with ½ tablespoon shredded cheese and cilantro. This dish is great for any meal.
