Okay, I tried this recipe tonight and it is SUPER good!
Dark Chocolate Rice Pudding
1/4 c. unsweetened cocoa powder
1 scoop vanilla protein (make sure it's got about 50g protein)
2 packets stevia/Splenda, or "to taste"
3/4 to 1 c. milk (I use unsweetened soy milk bc it has only 8g carbs and 6g protein w/ 0g sugar)
1/2 tsp. vanilla extract
3/4 c. cooked brown rice
-In a 1 quart saucepan, combine the cocoa powder, sugar, and protein powder. stir in 1/4 c. of the milk to make a smooth, pudding-like texture. Stir in the vanilla and the rest of the milk, then add the rice. Stir, bring the mixture to a boil, then lower heat and cook, uncovered at a low boil, constantly stirring. Cook for about 5 minutes (maybe less, don't burn the chocolate!); it will thicken as it cools.
-Makes two servings and stores well for about two to three days. Yum!
I wonder if it would be as good with oatmeal instead of rice.....
