Hi all,

My friend and I had the most delicious dinner and I wanted to share the recipe. I have been getting pretty creative in the kitchen to save myself from boredom. Enjoy!

 

Salsa Chicken and Pasta

 

4 medium chicken breasts

1 box of whole wheat pasta

2 cups homemade salsa (or to taste)

 

First we will make homemade salsa. To make this task easier, you will want to use your food processor. You will need the following ingredients:

 

6 medium tomatoes

5 jalepenos  (red is best)

¼ medium onion

2 cloves garlic

2 tablespoons chopped fresh cilantro

2 tablespoons white vinegar

2 teaspoons salt

1 ½ teaspoons mesquite flavored liquid smoke

 

On a cutting board, cut your tomatoes into small cubes. You can throw them in the food processor, but for chunkier salsa, you might want to cube these by hand. Toss any excess tomato juice away.

 

Remove all stems from the peppers and put in food processor. Add the rest of the ingredients. Puree on high speed until mixture has a smooth consistency. Place in large bowl. Mix in the tomatoes and chill for several hours, so flavors can mingle.

 

Make a box of whole wheat pasta according to directions.

 

Cut chicken breasts into small morsels and place on George Forman grill for about 3 minutes or until all pink disappears.

 

Serve hot or cold.

 

If you are addicted to sour cream, try fat free sour cream or Greek yogurt.

 

If you find the salsa is bit too hot, try using fewer jalapenos.
