the following recipe was posted by kiwigirl in our little group Direction determines destination.

quite a tasty recipe, and a pretty useful meal replacement.

Hi guys here is one of my favourite recipies, these help me get through the week when i feel i wana snack on something naughty

PROTEIN BANANA MUFFINS

Serves 3:  2 texas muffins or 4 smaller ones

1 cup flour   ( Gluten free flour seems to be better for this recipe)

2/3 cup nonfat milkpowder

¼ tsp baking soda

½ tsp cinnamon

¼ tsp nutmeg

2 tsp vanilla essence

5 tsp splenda or equal powder

8 egg  whites

2 scoops protein powder

2 pureed bananas

Mix all together, put into 6 large muffin tins or 12 smaller ones and bake 180°C until they bounce back.  2 large muffins per serving (or 4 smaller ones).  They look weird but taste yummy with a tsp honey spread. ENJOY they are soooo yummy.

I regularly put these into my weekly plan, i would have these 4 x a week.
