I'm starting on the BFL diet again next week. Is there any reason that I couldn't sub a veg for a carb in the meals. ie. do a protein and a veg or at my two larger meals do a protein and two veggies?

It takes an enormous amount of veggie to equal enough carb. Don't be afraid of carbs. If you have the right portion of the right types of options you are fine.
