In the food list in the book squash is listed as a carb. Any idea why? It's carb count is lower than tomatoes. I don't get it.
It's because squash is a more "starchy" vegetable, more like a potato ounce for ounce it's just a smidge less starchy than a potato and will affect your glycemic index the same way a potato does. I was looking at the following site and based on that, the squash has more carbs than tomatoes. I looked at 1 cup squash vs. 1 cup potato vs. 1 cup grape tomatoes.
