Fancied something different for dinner last night so made these and served it with chicken *** and a little homemade salsa. Was soooo good and really filling nearly missed my last meal time because was still really content.
Stuffed peppers (serves 2)
1/2 large onion diced
1 big clove of garlic finely chopped
10 cherry tomatoes or 4 normal chopped
1 cup of cooked brown rice
2 heaped tsp curry powder
Spray cooking oil
Preheat oven to 200C
Spray a pan with the cooking spray and then fry the onion and garlic until soft. Add the tomatoes and let cook a few more minutes to soften them.
Whilst this is happening cut the top off your peppers and remove the seeds
Add rice and curry powder to onion garlic and tomato mixture and mix to absorb and juices in the pan.
Remove from the heat and then use this mixture to fill your peppers replacing the lid you cut off.
Place on a oven tray and pop in the oven for around 40 minutes until the pepper is soft.
