I was wanting to start my BFL challenge tomorrow and I'm noticing that there are not dates available for 2011 right now, and the last date for 2010 was a month ago.
Do I just start and then submit once the official dates come out?

You can start at anytime. As along as you take your before photos and measurements and send in a packet upon completion of your challenge, you'll be considered among the 2011 challenge group.
